Time of budburst: 7 days after the Chasselas.
Time of maturity: 2nd period, 2 and a half weeks after the Chasselas.
Technological potential
The bunches and berries are small. Sauvignon B allows the production of very elegant, very fine, balanced and typical dry white wines. The varietal aromas of Sauvignon B, especially present in the wine in the first years, are quite specific and can present nuances (broom, blackcurrant, boxwood,…) depending on the terroir, the vintage and the growing conditions. In late harvest or in the presence of noble rot, this variety can also participate in the elaboration of great sweet wines.
Cultural and agronomic skills
Sauvignon B is very vigorous and has a tendency to get carried away in vegetation. We must therefore try to control this vigor by planting it in soils of low or medium fertility, by using weak rootstocks and by practicing an adapted pruning, which can be quite generous in the first years. By careful trellising and an adapted training system, we must also try to obtain a favorable micro-climate for the grapes.
Elements of description
Identification involves:
- the tip of the young shoot with a very high density of recumbent hairs,
- the young leaves yellow or yellow with tan patches,
- the shoot with green internodes,
- the adult leaves small to medium, orbicular with five lobes with a little open to open petiolar sinus, medium-sized teeth with convex sides, no anthocyanic pigmentation of the veins, a bubbled blade, tormented, curled on the edges and, on the lower side, a low density of erect hairs and a low to medium density of flat-lying hairs,
- with berries that are elliptical in shape.
